500 gr avalanche potatoes, peeled and halved
50 gr ghee/duck fat
4 garlic cloves, skin on (optional)
2 sprigs of rosemary
salt and black pepper to season
For the homemade Dukkah:
2 cups mixed nuts
1 teaspoon cumin seeds
1 teaspoon coriander seeds
½ teaspoon dried oregano
1 teaspoon fresh, chopped parsley
1 teaspoon fresh, chopped thyme
