~1/4 cup light, olive oil mayonnaise
1 large golden zucchini (or substitute traditional zucchini), sliced as thin as you can lengthwise (using a mandolin helps)
Old Bay seasoning
2 tsp extra virgin olive oil
2 cups uncooked brown rice
2 tsp extra virgin olive oil
1 yellow onion, diced
2 large cloves garlic, finely chopped
1/2 c chopped cilantro
1 tsp kosher salt (plus more to season to taste)
1/4 to 1/2 tsp fresh cracked pepper (to taste)
