1 small yellow onion, chopped
5-6 button mushrooms chopped (if you have shitake mushrooms, even better!)
2 cloves garlic
½ teaspoon freshly grated ginger
½ teaspoon salt
½ teaspoon of Korean chili powder (optional)
1 teaspoon rice vinegar
2 tablespoons soy sauce
½ teaspoon Chinese five spice powder
4-5 cups vegetable stock or chicken broth
1 cup firm tofu cut into cubes
2 cups tender baby greens of your choice, I used baby bok choy and spinach
2 eggs
salt and pepper to taste
