These fun little mini meatloaves have melted mozzarella baked right inside for a flavorful surprise. This recipe makes about 18 mini meatloaves. If you don’t have a crowd to feed, you can still make a big batch and freeze any extras.

3 eggs
1/2 cup finely diced onion
1/2 cup finely diced celery
1/2 cup steel-cut oats
1 (6-ounce) can tomato paste
5 part-skim mozzarella cheese sticks, cut into fourths

2 teaspoons salt
1 teaspoon ground black pepper
