1 cup Healthy Homemade Baking Mix
1 cup milk
4 eggs
For Filling:
1 cup cooked boneless, skinless chicken breast, diced small
1 cup raw russet potatoes, peeled and diced small
1 cup veggies of choice (I used celery, red bell pepper, and red onion.)
1 cup sharp cheddar or Colby cheese
salt and pepper, to taste
