Fresh PastaIn the bowl of a food processor, combine 1 ¼ cups all-purpose flour, 2 large eggs and 1 Tbsp. olive oil. Process until a smooth (not sticky) ball of dough collects and rotates around the blade. If your dough is sticky, add flour in Tbsp. increments, working it with the food processor between additions. Cover surface of dough with plastic wrap; set aside to rest 10 min before rolling out

2 bunches spinach (about 1 ½ lbs.), washed and thick stems removed
1 garlic clove, finely grated
2 cups ricotta
½ cup grated Parmesan
Kosher salt and freshly ground pepper
Grated nutmeg, to taste
1 recipe fresh pasta, below
Browned butter or olive oil for serving
