Meat Sauce:
2 tbsp. olive oil
250g/9oz skinless chicken breast, diced
1 brown onion, peeled and chopped
2 cloves garlic, peeled and crushed
50g/1.75oz chorizo, sliced into small chunks
1/2 tsp cumin
1/2 tsp cinnamon
1/2 tsp ground coriander
1 regular red or green chilli, chopped
1 x 400g/14oz tin of good quality chopped tomatoes
1/2 of a 400g/14oz tin of kidney beans or mixed beans, drained and rinsed
1 tsp sugar

White Sauce:
40ml/1.4fl oz sour cream
50ml/1.75fl oz double/heavy cream
25g of cheddar cheese, grated

You will also need:
2 corn tortillas (check for gluten free ones if required)
75g of mixed cheddar and orange cheese (such as red Leicester)
2 corn tortillas

To Serve:
Soured cream
Chopped fresh coriander
Chopped fresh chillies
Chopped avocado
