Ingredients
Half a cup of Mirin (Japanese wine-based condiment, from most grocery stores)
2-3 tablespoons rice wine vinegar
1 medium red onion, diced
1 bell pepper (use a portion of several in different colours), diced
1/3cup cider vinegar
Half a regular mango, diced
1 small tomato, diced
A few stalks each of flat leaved parsley, cilantro, chives, basil, mint
Quarter teaspoon of salt
Optional: a little jalapeno or hot sauce, if a little heat is desirable
Preparation
