2 eggplants
Olive oil (to brush onto the eggplant)
1 pound of ground beef
1 small onion (finely diced)
2 garlic cloves
2 tbsp of parsley (chopped)
1/4 cup of spinach (cooked and chopped)
1 medium tomato (peeled and chopped)
2 tbsp of tomato paste
1/4 cup of sundried tomatoes (chopped)
2 tbsp of bread crumbs
1/2 cup of freshly grated parmasan cheese (divided)
1/4 tsp of cinnamon
1/2 tsp of allspice
Salt and pepper
1 cup of marinara sauce
