1/4 teaspoon salt + pepper
2 tablespoons oil, divided (use an oil with high smoke point)
4 eggs, beaten
11/2 cups peas and carrots, frozen
4 scallions, sliced
2 cloves garlic, minced
51/2 - 6 cups cooked cold rice
2-3 tablespoons soy sauce
1/4 teaspoon red pepper flakes
1 tablespoon sesame oil
