Ingredients

Serves: 6-8

2 medium plum tomatoes, sliced
1 medium zucchini, thinly sliced lengthwise into 6 slices
salt
2 tablespoons olive oil, plus more for oiling the pan
1 large onion (red or white), finely chopped
4 cloves garlic, minced
1/4 cup chopped fresh parsley
1 tablespoon dried basil
2 teaspoons dried oregano
1 teaspoon freshly ground black pepper
1 teaspoon crushed red pepper flakes
1 heaping cup fresh bread crumbs
1 can (8-ounce) tomato sauce, divided
2 large eggs
1/2 cup freshly grated Parmesan cheese
1 pound ground white turkey meat
1 pound ground dark turkey meat
1/2 cup shredded Mozzarella cheese

ROASTED RED PEPPER AND BALSAMIC GLAZE:
1 jar (12-ounce) roasted red peppers (in water)
1/2 cup tomato sauce
2 teaspoons balsamic vinegar
salt and freshly ground black pepper, to taste
