Ingredients
Shrimp:
10 Slices of Thin sliced good quality bacon
20 Large shrimp, cleaned, peeled, deveined
1 Tablespoon of vegetable oil
2 teaspoons of fresh cracked black pepper
Grits:
2 cups low-sodium chicken stock
1/2 cup of milk
2 cups of instant grits
1/4 cup of seeded and diced habanero peppers
1 cup of grilled corn kernels (in winter I use frozen)
1/2 cup of extra sharp white cheddar, grated
2 Tablespoons of Cilantro
Tomato-Butter Sauce:
1 Tablespoon of vegetable Oil
1 Medium onion rough chopped
3 garlic cloves minced
4 plum tomatoes rough chopped
1 1/2 cups of low-sodium chicken stock
5 tablespoons of unsalted butter, divided.
1/2 bunch of fresh cilantro
Juice of 1/2 lemon
Salt, fresh cracked black pepper
