Crust:
1 cup raw almonds
14 soft-pitted dates
2 tbsp coconut flakes
2 tbsp maple syrup (or other liquid sweetener)

Cheesecake Filling:
2 cups raw cashews (soaked at least 3 hours)
1 cup coconut milk, full fat
2/3 cup coconut oil, naturally melted
1/2 cup fresh squeezed lemon juice
1 cup coconut sugar (or other granulated sweetener)
2 tsp alcohol-free vanilla extract
(*Use 2/3 of the filling for cheesecake. Save 1/3 for topping)

Topping:
1/3 of the cheesecake filling
ΒΌ tsp alcohol-free vanilla extract
1 cup fresh blueberries
1 tbsp maple syrup (or other sweetener)
