Ingredients

6 small (US No. 1) white potatoes (about 1 3/4 lbs/795 g)
1 tablespoon olive oil, plus more to oil the casserole dish
1 medium onion, thinly sliced
2-4 jalapenos, de-seeded and minced (use 2 for “mild”)
1 clove garlic, minced
1/8 teaspoon salt
1/4 teaspoon black pepper
1/2 (7 oz/198 g) pack GO Veggie! Lactose-Free Cheddar Shreds
1/2 (7 oz/198 g) pack GO Veggie! Lactose-Free Mozzarella Shreds
3 strips crispy cooked beef or turkey bacon, crumbled
3 scallions, green and white parts, thinly sliced
