Ingredients
Crust:
315g | 2 1/2 cups plain flour
1 tbsp sugar
1 tsp salt
185g | 1 1/2 sticks cold unsalted butter, cubed
50g | 1/4 cup cold vegetable shortening, cubed
1 tablespoon white vinegar
60ml | 1/4 cup ice-cold water (or less, as needed)
Filling:
5 medium cooking apples (such as Bramley)
3 eating apples (such as Pink Lady)
Juice of 1-2 lemons
4 tbsp soft brown sugar
3 tbsp sugar
1 tbsp cinnamon
1/4 tsp ground cloves
1/4 tsp freshly grated nutmeg
A couple of dashes Angostura bitters
2-3 tbsp salted caramel (optional) I used Bonne Maman here
1 egg beaten with splash to milk to glaze
Demerara sugar to sprinkle
