Grind granola in a food processor (or your Ninja blender).
Wash chicken tenders thoroughly.
Set up prep station...chicken, egg substitute, granola and flour mixture.
Dip chicken tenders in egg substitute, dredge in granola flour mixture.
Fry in heated olive oil for 15 to 20 minutes, flipping regularly for even cooking.
Plate with mashed potatoes, gravy, and cranberry sauce.
Enjoy!
