Red Beans and Rice contains ingredients that are easy to store in the pantry, making it a perfect “go-to” recipe for hectic evenings. It takes about 30 minutes to make, depending on the type of rice you use. You can make the vegetarian or vegan by omitting the bacon and using vegetable broth. Ingredients
6 slices of bacon, cut into 1 inch pieces OR 2 ounces sliced sausage (optional)
1 large onion, diced
2 cloves of garlic, minced
1/2 large green bell pepper, diced
1 – 2 tablespoons olive oil if omitting the bacon
1 cup long grain rice
14 ounce carton of beef broth OR 2 1/2 cups home made broth of your choice
1 teaspoon dried thyme
1/2 – 1 teaspoon salt, to taste
40 oz. can kidney beans, drained and rinsed (or 4 cups cooked kidney beans)
