Kid friendly and mommy approved. Really! These chicken nuggets are so delicious and far better for you and your family than fast food or freezer nuggets! They freeze and reheat well too!

Ingredients

Yield: 5 dozen large nuggets

1 cup quinoa, cooked and cooled
2 small zucchinis
1 teaspoon olive oil
1/2 of a yellow onion
2 carrots, peeled
3 cloves garlic
1/2 of a green bell pepper
1 egg
1 tablespoon dried basil
8 boneless skinless chicken thighs
1/4 teaspoon Worcestershire sauce
3-4 cups panko bread crumbs
nonstick cooking spray
