Raw pastry cookies filled with a dollop of freshly made strawberry jam!

Ingredients

Strawberry Jam:
12 medjool dates pitted
1/2 lemon juiced
1/2 lemon zested
11/2 cups strawberries
1 teaspoon vanilla extract
2 tablespoons maple syrup
1/4 teaspoon salt

Pastry:
1 cup cashews
1/2 cup almond flour
1/2 cup coconut flour
1/3 cup coconut flakes
1/4 teaspoon salt
1/4 cup maple syrup
