olive oil, for sauteing
1 small onion, diced
coarse salt and fresh black pepper
3 fat cloves garlic, minced
2 cans low-sodium chicken broth
1 cup kosher dill pickle juice
4 - 5 cups potatoes, peeled and cubed (about 1 + 1/2 pounds)
1 cup grated carrot
1 cup kosher dill pickles, diced small, plus extra for garnish
1 teaspoon dried dill
1/2 cup sour cream
1 cup Swiss cheese, shredded, plus more for garnish
