1 cup Panko bread crumbs
1/3 cup freshly grated Parmesan cheese
1/4 cup all-purpose flour
1 tablespoon Italian seasoning
2 eggs, beaten
olive oil spray or olive oil, for greasing the pan
Dip:
1 tablespoon butter
1 tablespoon olive oil
1 large onion, thinly sliced
2 tablespoons cider or white wine vinegar
2 tablespoons honey
1 tablespoon stone ground or Dijon mustard
1 cup sour cream (light or regular, not non-fat)
salt and pepper to taste
