Ingredients

FISH AND SAUCE
6 tablespoons butter
2 tilapia filets
1 large shallot, minced
1 cup white wine
2 small lemons, zest & juice (or 1 large lemon)
3-4 tablespoons creme fraiche
2 tablespoons chopped mixed herbs (I used dill, thyme, chives, and parsley)

GARLIC-SERRANO QUINOA
2 cloves garlic, minced
1 serrano, sliced thin (and deseeded)
1 cup quinoa
1 cup chicken broth
1 cup water

TOPPING
Arugula
Lemon juice
