Salted Caramel:
1 cup sugar
1/4 cup water
2 tbsp butter
1/2 cup heavy cream (whipping cream)
1/2 tsp Windsor® Fine Sea Salt
Mousse:
1 cup heavy cream (whipping cream)
1 envelope gelatin
1/4 cup water, cold
1/4 cup water, hot
1 1/2 cup blueberries, fresh (not frozen)
1/2 - 1 tsp Windsor® Coarse Sea Salt (for sprinkling)
Preparation
