Jam and Coconut Sponge is a cake which I have grown up with. It is one of my earliest memories of cake so always holds a dear place in my heart. It’s one of the first cakes I learned to bake, and a great one at that as it is a super base cake which you can easily change and modify into other recipes. Jam and Coconut always comes up tops though.
