Soft gingerbread cookies with rich molasses undertones. Gently spiced and baked just long enough to have a sweet and chewy cookie. These aren’t your cardboard house-building variety. Decorate them with chocolate, caramel, or royal icing. Or dunk them in some hot chocolate, grab a blanket, and watch the snow swirl outside your window.

1 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon cloves
