¾ cup (100 gr) of thinly sliced pancetta
¼ cup of good quality red wine
1 sprig of rosemary
2 tablespoons of unsalted butter
2 big spoons of flour
1.5 cups of chicken or turkey stock + ½ a cup, just in case
