5-6 small potatoes cut in half**
1 fennel bulb cut into thick wedges
1 sweet red pepper deseeded and cut into slices
1 carrot cut into chunks
1 garlic clove crushed
11/2 tablespoons wholegrain mustard
1 cup (250 ml) chicken stock
parsley for topping
