dough:

1 cup warm milk
7 g dry yeast (1 sachet)
3½ cup plain flour
1 tsp salt
¼ cup caster sugar
2 tbsp butter, melted
1 egg, lightly beaten
1 egg, extra (for brushing)
1 tbsp milk (for brushing)

filling:
¾ cup brown sugar
1 tbsp cinnamon
1½ tsp cardamom
1/3 flaked almonds, plus extra for garnishing
1/3 cup butter, melted

caramel:

1 cup white sugar
1 cup brown sugar
½ cup water
65 g butter (8 tbsp)
120 ml cream (½ cup)
1 tbsp bourbon
