Ingredients
Makes 3 mini mousse cakes, diameter 8 cm.
Ingredients for the chestnut layer:
1 small egg white (save the egg yolk for the chocolate mousse)
A pinch of cream of tartar
1 table spoon powder sugar
1 large egg
40 grams (1,4 oz) Muscovado sugar
40 grams (1,4 oz) butter, at room temperature
80 grams (2,8 oz) chestnut meal
25 grams (0,9 oz) rice flour
A pinch of salt
Ingredients for the chocolate mousse:
100 grams (3,5 oz) dark eating chocolate
60ml. + 80ml. sweetened heavy whipping cream
1 egg yolk
20 grams (0,7 oz) sugar
1/2 tea spoon vanilla extract
5 grams of gelatine (half a package)
10 ml. water
Ingredients for the chocolate ganache:
50 (1,8 oz) grams dark eating chocolate
15 grams (0,5 oz) butter
15 ml. heavy whipping cream
For the caramelized nuts:
40 grams (1,4 oz) sugar
50 grams (1,8 oz) raw nuts (pistachios, pecan, almond, hazelnut or mix of all)
