Homemade custard creams are more luxurious and rich and a foolproof biscuit recipe means that you can play around with flavours. An impulse purchase of lychee liqueur had been sitting rather forlornly on my shelf, so this seemed like the perfect opportunity to introduce an interesting and underused fruity flavour (and who doesn’t like a boozy biscuit?).

Ingredients

Biscuits:
150g plain flour
1 egg yolk
100g unsalted butter
10g custard powder
20g desiccated coconut
60g icing sugar
1/2 tsp vanilla essence
Caster sugar (for sprinkling)

Filling:
70g butter
170g icing sugar
1 tbsp lychee liqueur (I like Gabriel Boudier)
