Puff pastry is very versatile and can be used for so many different shapes, as well as acting as the perfect carrier to all kinds of flavours, both sweet and savoury. On this occasion I’ve opted for a classic combination, pesto and Parmesan, all wrapped up in one of the prettiest traditional puff pastry shapes: the palmier.

Ingredients

Pesto:
40g pine nuts
60g basil
30g parmesan
100ml olive oil
1 tsp garlic paste

Puff pastry:
125g plain flour
125g strong white flour
1 tsp salt
250g butter
100ml cold water
