Ingredients
Makes two sandwiches
For the tomato jam:
20 oz cherry or grape tomatoes, halved
2 tablespoons olive oil
1 large garlic clove, minced
1/2 teaspoon salt
fresh ground pepper
1 teaspoon cane sugar
For the sandwiches:
4 slices of bread, I used multigrain sourdough
unsalted butter
4 oz mozzarella (one heaping cup), grated
tomato jam - recipe above
small handful of fresh basil
a pinch of salt + pepper
1 large avocado (optional)
