There isn't a better way to beat the heat of the summer with a satisfying salsa of grilled corn and peaches. Also invited: jalapeno and cotija cheese!

Ingredients

Serves: 3 cups
Prep Time: 10 mins
Total Time: 20 mins

3 ears of grilled corn, kernels cut off of the cob
1 seeded and minced jalapeno
1/2 seeded and diced red bell pepper
1/2 finely chopped shallot
1 diced peach
1/2 cup crumbled cotija cheese
1/2 tsp cumin
1/2 tsp chili powder
a dash of cayenne (if desired)
1 tbl of cilantro (+ additional for garnish)
juice of 1 lime
