Roasted Cabbage Steaks with Mustard Sauce

Preheat oven to 400 degrees.
Brush baking sheet with a very small amount of oil just to prevent sticking.
Combine all of the ingredients for the dressing.
Trim just enough of the bottom of a medium cabbage to sit flat on your cutting board and peel off any unsightly leaves.
Position the cabbage on it's now trimmed core, slice the cabbage into 1" steaks.

1 Medium Cabbage, cut into 1" steaks

FOR THE DRESSING:
1-1/2 tsp Olive Oil, plus some to brush the baking pan
1-1/2 Tbl Balsamic Vinegar
1 Tbl Agave or Maple Syrup
Salt & Pepper, to taste

FOR THE MUSTARD SAUCE:
1 Tbl Dry Mustard
1/2 C Cold Water
1/2 C White or Apple Cider Vinegar
1/4 C Sugar
2 Tbl Flour
Almond Milk to thin
