1 packet (1/4 ounce, 21/4 teaspoon) instant yeast
3/4 cup warm water (110 to 115°)
2 tablespoons fresh basil, chopped
1/4 cup parmesan cheese, grated + extra to garnish
1 teaspoon crushed garlic (about 2 cloves)
2 tablespoons + 1 teaspoon tomato paste
1 tablespoon granulated sugar
1 tablespoon olive oil
1 teaspoon kosher salt
2 1/2-2 3/4 cups bread flour
10 11/2" cubes or balls of mozzarella cheese
Egg white, for egg wash
