Makes one 9 inch / 23 cm tart

Pretzel biscuit crust:
1 + 1/2 cups (120 grams) digestive biscuits or graham crackers
1 cup (100 grams) pretzel pieces
2 tablespoons (30 grams) caster sugar
115 grams (1/2 cup or 1 stick) unsalted butter
Salted caramel layer
1 + 1/2 cups (340 grams) caster sugar
115 grams (1/2 cup or 1 stick) unsalted butter, chopped, room temperature
1/2 cup thickened or heavy cream, room temperature
1 teaspoon salt

Chocolate ganache:
1 and 1/2 cups (230 grams) good quality dark chocolate
1 cup thickened or heavy cream
Extra pretzels for decorating
