For the “Cinco de Mayo” I desired to eat a delicious Mexican chicken (like all of us!), but not one of the usual Mexican recipes. I wanted to find out a recipe that I had never experienced before. 4 chicken drumsticks
4 chicken thighs
1 cup (110 gr) silvered almonds
1 (150 gr) yellow onion
3 cloves of garlic
1 red tomato
4 (80 gr) slices of bread (best if old-day)
6 tbsp (50 gr) extra virgin olive oil
2 cloves
2 bay leaves
1 qt chicken stock
1 tsp cornstarch
to taste ground black pepper
to taste table salt
