One recipe Choux dough
For the pumpkin cream:
1 cup heavy cream
1/2 cup confectioners sugar
15 ounce can pure pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 teaspoon vanilla extract
For the maple brown sugar topping:
3/4 cup packed brown sugar
1/4 cup maple syrup
4 tablespoons butter cut into chunks
1/2 cup heavy cream
Kosher salt
