3 pounds ripe but firm pears (I used anjou), pealed, cored and cut into 1/4 inch slices
2 tablespoons maple syrup
2 tablespoons fresh squeezed lemon juice
1 tablespoon corn starch

3 ounces ginger snaps
1/2 cup all purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 tablespoons salted chilled butter cut into small chunks
