3/4 cup cocoa powder unsweetened, not dutch processed
1 tsp baking powder
2 tsp baking soda
1 tsp salt
1 cup buttermilk *
1/2 cup vegetable oil or canola oil, or melted coconut oil
2 eggs large & at room temperature
1 tsp vanilla extract
1 cup coffee strong, hot, and freshly brewed
1 tsp gelatin unflavored (such as Knox brand, usually a little less than 1 packet)
1 and 1/2 cups heavy whipping cream divided and chilled
1/4 cup powdered sugar or up to 1/3 cup, to taste
1/2 tsp vanilla extract
1 and 1/4 cups unsalted butter (2.5 sticks)
3 to 4 cups powdered sugar **
3/4 cup cocoa powder unsweetened
3 to 5 tbsp heavy whipping cream or half and half
1 tsp vanilla extract
1/2 to 3/4 tsp salt to taste
