11/2lb. salmon fillets, skin removed
1/2-1 teaspoon blackened seasoning per salmon fillet
1 cup quick cooking brown rice
11/4 cup full fat coconut milk
11/4 cup water
1 teaspoon sea salt
1 cup fresh pineapple, chopped into small chunks
1 small red bell pepper, seeded and chopped small
1 small jalapeƱo, seeded and finely chopped
1/2 cup finely chopped red onion
1/4 cup freshly chopped cilantro
juice of 1 lime
