4 pound boneless pork butt or boneless country ribs, fat trimmed and cut into 2 inch cubes
2 teaspoons canola oil or other vegetable oil
11/2 teaspoons salt
3/4 teaspoon pepper
1 teaspoon ground cumin
1 onion, peeled and quartered
2 bay leaves
1 teaspoon dried oregano
2 tablespoons fresh lime juice
2 cups chicken stock
1 medium orange, quartered and juiced (keep the rinds)
