For the chocolate wafer crust:
9 ounces chocolate wafer cookies

For the filling:
4 ounces dark chocolate, chopped (I used chocolate chips)
1/4 cup plus 1 tablespoon heavy whipping cream
3 tablespoons unsalted butter
2 tablespoons light corn syrup
1 cup powdered sugar, sifted
1 tablespoon Kentucky bourbon
1 to 1 1/2 pints coffee ice cream (or flavor of your choosing)
For the bourbon fudge topping:
2 tablespoons heavy cream
2 tablespoons unsalted butter
1 tablespoon light corn syrup
3 ounces dark chocolate, chopped
1/2 teaspoon Kentucky bourbon
1/2 teaspoon vanilla
For the whipped cream:
1/2 cup heavy whipping cream
2 tablespoons powdered sugar
