Ingredients
Serves: one 12-inch tart (serves 8 to 10)
Tart Dough:
11/3 cups (62/3oz) all-purpose flour
1/4 cup (1oz) powdered sugar
1/2 teaspoon salt
1/2 cup (4oz/ 1 stick) very cold unsalted butter, cut into 1/4-inch pieces and chilled
1 large egg
Apples and Topping:
1/2 cup (4oz/ 1 stick) unsalted butter
3/4 cup (51/4oz) granulated sugar
1/2 teaspoon cinnamon (optional)
5 large or 6 medium apples (21/2 pounds), peeled, cored and quartered (*see note for best types of apples for baking use)
