For the Puree:
1 large head of cauliflower
1 can of coconut milk
Salt to taste
For the pesto:
1/2 cup of pistachios
1/2 cup of basil, packed.
1/4 cup of parmesean
1/2 cup of olive oil
Zest of half a lemon
1/2 of salt, to taste
For the meatballs:
1 lb of ground lamb (if you hate lamb you could totally substitute with beef or pork. This will still be amazing)
1 tablespoon of parsley
1 teaspoon of cumin
1/2-1 teaspoon of crushed red pepper flakes (more if you love spicy food)
1 teaspoon of salt
1 egg
Zest of 1/2 a lemon
