Hearty and delish. Red Lentil soup Chopped is the perfect comfort food. Use veggie broth and it vegetarian and vegan. It's naturally Gluten Free.
Ingredients
Serves: 6 Servings
Prep Time: 5 minutesCook time:
1 Tablespoon Olive Oil
1 cup Chopped Carrots
1 cup Chopped Red Potatoes
2 Garlic Cloves, finely Chopped
1 cup Chopped Mushrooms, any kind you like.
3 Green Onions, Chopped
1 Teaspoons Dried Dill
1/2 teaspoon Kosher or Sea Salt. You'll do a final seasoning after the soup cooks down and the flavors are concentrated.
1 Tablespoon Red Wine Vinegar
4 cups Chicken or Vegetable Stock, Canned, Boxed or Homemade.
If you want a "soupier" soup and 1 more cup of broth.
1 cup Red Lentils
1 cup Chopped Kale
