700g (1.5lb) chicken thighs (skin off, bone in)

1 + 1 Tablespoons oil
1 medium onion, chopped
1 garlic clove, crushed
1/4 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon ground coriander
1 tablespoon "chipotle in adobo" paste
1/2 teaspoon dried oregano
1 tablespoon tomato paste
1/2 teaspoon sugar
1/2 cup passata (sieved Italian tomatoes)
1/2 chicken stock
1/2 cup grated cheddar
1/4 cup sour cream (I used light sour cream)
Arepas:
1 cup arepa flour (precooked white maize meal)
1 cup warm water
1 teaspoon salt
1 tablespoon oil + oil spray
Jalapeno Guacamole:
1 medium ripe avocado (230g - 8oz) peeled & chopped
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon ground cumin
1 tablespoon extra virgin olive oil
1/4 teaspoon crushed garlic
1/4 cup deseeded chopped tomato
1 tablespoon chopped pickled jalapenos
1 - 2 tablespoon chopped red onion
