1 tsp vanilla extract
2 cup2 all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 tsp pumpkin pie spice
1/2 cup milk

For the frosting:
8oz package mascarpone cheese, softened
4 oz package cream cheese, softened
1 cup confectioner's sugar
1 tsp vanilla paste
3/4 tsp ground ginger

For the caramel:
1/2 cup packed light brown sugar
3 Tbs unsalted butter
1/4 cup evaporated milk
