Ingredients

Streusel Crust and Topping:
1 cup gluten-free oat flour (I grind my own from old fashioned rolled oats) (can substitute with all purpose flour)
1/2 cup certified gluten-free old fashioned rolled oats (you can use all quick oats if you prefer
1/2 cup of certified gluten-free quick oats (you can use all old fashioned oats if you prefer)
1/2 cup dark brown sugar
1 tablespoon ground cinnamon
1/4 teaspoon of salt
1/2 cup unsalted butter, cold and cubed
1/4 cup toasted shredded coconut
Peach Filling:
2 cups of fresh peaches, peeled and chopped (I used 3 medium peaches)
1 large egg, room temperature
1/2 cup of honey or agave syrup
2 tablespoons of gluten-free oat flour
Optional Topping:
Dulce de Luche. homemade or storebought
