2 large eggs, room temperature (or 3 egg whites, if trying to use them up!)
1/2 tsp vanilla extract
1/2 cup unsweetened almond milk
Ice Cream:
2 1/2 cups whipping cream
1 cup unsweetened almond milk
1/2 cup Swerve Sweetener
1/2 cup chopped fresh mint leaves
4 large egg yolks
2 tbsp vodka (optional, helps reduce iciness)
2 tbsp vegetable glycerin (optional, helps keep it soft in the freezer)
1/2 tsp mint extract
1/4 tsp liquid stevia extract
1/4 tsp xanthan gum
1/2 cup chopped dark chocolate or Homemade Sugar-Free Chocolate Chips
Chocolate Ganache:
5 tbsp butter
2 oz unsweetened chocolate
1/4 cup powdered Swerve Sweetener
1/2 tsp vanilla extract
